Cooking with Charcoal

  • Indirect cooking with lower heat usually in a kettle with a lid on top. Here the cooking time is longer and the coals are placed on the side of the kettle with a drip try in the middle. This creates almost an outdoor oven.

  • Sirloin - Is a tender cut from the back of the loin.
  • Filet steak - the most expensive, lean and boneless.
  • T-bone - with a t-shaped bone - juicy and succulent.

Cooking times for steak about 2.5 cm/1 inch is about 8-10 minutes in total but, if you like it rare 5-7 minutes.


Lamb Cuts

  • Chump chops - has a smaller bone and the meat is firm.
  • Loin chops - delicious for the barbecue.
  • Leg of lamb - Have the butcher de-bone it for you, very tender, excellent.
  • Rack of lamb - smaller joints, cut between the bones for individual pieces - can be very fatty.

Lamb takes longer to cook about 10-15 minutes, depending on the cut and thickness of meat.

  • Spare ribs - usually marinated.
  • Fillet - very lean can also use for kebabs.
  • Chops - popular especially the skin part that gets nice and crisp over the bbq. If the fat is too much trim some off but, keep the skin part for crackling.

Pork should always be well-done - cook chops for 15 -20 minutes. Spare ribs are thick and should be cooked for 30-40 minutes.
